Bay Scallops and Bacon Lardons with Pasta
Ingredients
- 1 pound Bay Scallops
- 1/4 cup olive oil
- 1/2 pound slab bacon, cut into 1/4 inch cubes (lardons)
- 3 cups heavy cream
- 2 Tablespoon fresh thyme
- salt and pepper, to taste
- 8 ounces Angel Hair Pasta
Directions
Cook pasta according to package directions.
Sauté bacon in olive oil.
Remove bacon and pour off all but 1/4 cup fat.
Add scallops to pan and sauté for 2-3 minutes.
Add cream, bacon, thyme, salt and pepper to pan. Heat for 1 minute.
Serve over pasta.
